Sterilize and pasteurize convenience food and ready mealsThe ready-to-eat dishes which require heat treatment are classified into two categories:

  • the ready-to-eat dishes tinned in cans or containers: raviolis, bean stew, garnished lentils, traditional dishes, sauces, dressings...
  • fresh or processed ready-to-eat dishes: vegetable base dishes and meats or fish, pizzas...

The canned ready-to-eat dishes are generally at first packed in cans and need to be sterilized in order to be preserved and consumed over a period of 2 to 3 years. The Steam / Water suction or Steam / Air with back-pressure processes are perfectly suitable here for preserving the flavours and nutritional qualities of all your products.

The fresh ready-to-eat dishes which are themselves pasteurised should be consumed rather quickly while preserving their freshness. This type of food is generally packed in containers of 1 to 3 compartments according to the number of ingredients, or in flexible sachets. The recommended process in this case is static mode heat treatment. If the STERITECH Air and Water suction with back-pressure process has already worked out very well, our Air /Water with back-pressure treatment   enables to shorten the pasteurization cycle while also achieving more economies in water and energy.
