Today, it remains a mainstay of the global food industry. In this article, we&#8217;ll look at why, despite the rise of deep-freezing, modified atmosphere and innovative packaging technologies, cans remain a <strong>widely-used standard<\/strong>, and how <a href=\"https:\/\/www.steritech.eu.com\/en\/industrial-autoclaves\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Steritech<\/strong> autoclaves<\/a> contribute to this.  <\/p>\n\n<h2 class=\"wp-block-heading\">From appertizing to Industry 4.0 : the can revolution<\/h2>\n\n<h3 class=\"wp-block-heading\">The story of the invention of the tin can<\/h3>\n\n<p>Born of the <strong>need to preserve foodstuffs for the army over the long term<\/strong>, the tin can is the result of the work of Frenchman <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Bo%C3%AEte_de_conserve\" type=\"link\" id=\"https:\/\/fr.wikipedia.org\/wiki\/Bo%C3%AEte_de_conserve\" target=\"_blank\" rel=\"noreferrer noopener\">Nicolas Appert<\/a> and Englishman <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Bo%C3%AEte_de_conserve\" type=\"link\" id=\"https:\/\/fr.wikipedia.org\/wiki\/Bo%C3%AEte_de_conserve\" target=\"_blank\" rel=\"noreferrer noopener\">Peter Durand<\/a> in the early <sup>19th<\/sup> century. Nicolas Appert laid the foundations of <strong>appertization<\/strong>, the precursor principle of today&#8217;s autoclave heat sterilization processes for foodstuffs. He discovered that <strong>heating <\/strong>food in a <strong>hermetically <\/strong>sealed glass container could <strong>preserve<\/strong> it. Peter Durand subsequently patented the use of <strong>tinplate cans<\/strong>, which are more resistant than glass and better suited to the constraints of maritime transport.   <\/p>\n\n<p>In the <sup>mid-19th<\/sup> century, French scientist <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Louis_Pasteur\" target=\"_blank\" rel=\"noreferrer noopener\">Louis Pasteur<\/a> proved that micro-organisms can spoil food. His research consolidated the microbiological foundations of pasteurization and sterilization. <\/p>\n\n<p>At the end of the <sup>19th<\/sup> century, <a href=\"https:\/\/grokipedia.com\/page\/william_lyman_underwood\" type=\"link\" id=\"https:\/\/fr.wikipedia.org\/wiki\/Bo%C3%AEte_de_conserve\" target=\"_blank\" rel=\"noreferrer noopener\">W.L. Underwood<\/a> (American director of a canned food company) and <a href=\"https:\/\/grokipedia.com\/page\/william_lyman_underwood\" target=\"_blank\" rel=\"noreferrer noopener\">S.C. Prescott<\/a> (American scientist) discovered why some cans swelled and exploded despite being heat treated at 100\u00b0C. The cause of this deterioration was spore-forming, thermophilic microorganisms. For their shellfish cans, they found that applying pressurized steam at 121\u00b0C eliminated bacteria in 10 minutes.  <\/p>\n\n<p>In the early <sup>20th<\/sup> century, <a href=\"https:\/\/tech-alim.univ-lille.fr\/sterilisation\/co\/ch3_03_01.html#:~:text=Methode%20de%20Bigelow,-Nous%20savons%20que&amp;text=La%20m%C3%A9thode%20de%20Bigelow%20permet,contin%C3%BBment%20la%20temp%C3%A9rature%20%C3%A0%20c%C5%93ur.\" type=\"link\" id=\"https:\/\/tech-alim.univ-lille.fr\/sterilisation\/co\/ch3_03_01.html#:~:text=Methode%20de%20Bigelow,-Nous%20savons%20que&amp;text=La%20m%C3%A9thode%20de%20Bigelow%20permet,contin%C3%BBment%20la%20temp%C3%A9rature%20%C3%A0%20c%C5%93ur.\" target=\"_blank\" rel=\"noreferrer noopener\">W.D. Bigelow<\/a>, an American scientist specializing in food technology, laid the scientific foundations for <strong>calculating industrial sterilization processes<\/strong>. He developed a key method for determining the times and temperatures required to prevent the proliferation of any micro-organisms in canned products. <\/p>\n\n<p>At the same time, industrial autoclaves were being developed, enabling <strong>precise<\/strong> <strong>temperature <\/strong>and <strong>pressure<\/strong> <strong>control<\/strong>, as well as <strong>standardization of thermal scales<\/strong> with <strong>sterilizing and pasteurizing values<\/strong>, transforming canning into a <strong>safe, reproducible<\/strong> process.<\/p>\n\n<figure class=\"wp-block-image aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"570\" height=\"422\" src=\"https:\/\/www.steritech.eu.com\/wp-content\/uploads\/2026\/03\/il_570xN.3871410172_mfuj.webp\" alt=\"\" class=\"wp-image-11055\" style=\"aspect-ratio:1.350794659885569;width:336px;height:auto\" srcset=\"https:\/\/www.steritech.eu.com\/wp-content\/uploads\/2026\/03\/il_570xN.3871410172_mfuj.webp 570w, https:\/\/www.steritech.eu.com\/wp-content\/uploads\/2026\/03\/il_570xN.3871410172_mfuj-300x222.webp 300w\" sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/figure>\n\n<h3 class=\"wp-block-heading\">The evolution of materials and types of openings<\/h3>\n\n<p>Since its creation, <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Bo%C3%AEte_de_conserve\" target=\"_blank\" rel=\"noreferrer noopener\">the can has seen its materials evolve<\/a> towards <strong>more sustainable and healthier options<\/strong>. Originally, cans were made from tinplate with a layer of tin to prevent food oxidation. Toxic lead solder was replaced by safer alternatives such as tin soldering or crimping.  <\/p>\n\n<p>As industrialization progressed, thinner rolled steel, still tin-plated, made it possible to manufacture<strong> lighter, less expensive<\/strong> cans.<\/p>\n\n<p>The 20th century saw two major developments:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>The introduction of varnished interior coatings to prevent reactions between metal and food.<\/li>\n\n\n\n<li>The use of aluminum, which is lighter and naturally more resistant to corrosion (used mainly for beverages and certain foods).<\/li>\n<\/ul>\n\n<p>Today, cans are mainly made of <strong>tin-plated steel<\/strong> or <strong>aluminum<\/strong>, with <strong>BPA-free<\/strong> linings becoming increasingly widespread for health and environmental reasons.<\/p>\n\n<p>On the other hand, the first cans required a hammer and chisel to open them, and it was in the <sup>mid-19th<\/sup> century that the first manual can opener was invented by <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Bo%C3%AEte_de_conserve\" target=\"_blank\" rel=\"noreferrer noopener\">Ezra Warner<\/a>, followed by the winding wrench at the end of the <sup>19th<\/sup> century.
